My name is Laura and I was thrown into a world of confusion when I was diagnosed with Coeliac disease in 2014. As society is still learning about this debilitating condition, I have had to patiently endure my own difficult journey over the past few years as we adapted to living with it. Gluten-free meals can be cooked at home but traveling or going out on the town poses challenges that most people simply don’t understand: often times food advertised as gluten free turns out not to be so later – leaving those afflicted feeling sick for hours, regardless of whether you’re at home or away from your comfort zone. This inspired us to create ‘CoeliacEasy’, which helps individuals navigate safe options wherever life takes them!
